Medisterpølse is a Danish and Norwegian food of the 16th century and the word is derived from the combination of met (pork) and ister (suet). Initially, it was prepared with hand-chopped meat filling, but now machines are used to get a fine filling therefore texture of current Medisterpølse is quite different than old.
Fleaskesteg, a special style of pork roast with crunchy skin, and it is often served on the Danish Christmas Dinners. We use a pork loin cut and scored it across at 1 cm sections.
