It takes almost 15 to 20 minutes to cook so start cooking them before the roast is ready. Place the skin underneath up on a pizza tin in the oven to cook cracklings underneath, then turn the skin over after 10 minutes. After getting the desired brown colour, remove the cracklings from oven and let them dry for at least 2 minutes, and serve hot.
